From my observations, running a restaurant is a tough, tough job. For one to stay in business--at the same location, mind you--for 60 years, a lot must be going right.

The Apple Pan, at Pico and Westwood in West Los Angeles, has tried "to do simple things exceedingly well". Happy anniversary, folks.

I would very much like to try my hand at this and am looking for a partner with more experience in the business. The area where I live is a madhouse come feeding time. every single place you go to is crowded, even the bad ones.

I like this article it reinforces my belief, that you start small, with a little cafe and a limited menu of really good dishes. And good service.

Even mediocre food with really good service beats really good food with lousy service, at least in my estimation.
