One of my undergraduate students asked, so I slapped these links together:

Some notes, courtesy of Portland State University.

A shorter discussion from Elon.

Davidson's page about economics graduate school.

Duke's interesting page specifically about master's programs in economics.

And comments from a few of Johns Hopkins's Master's alumni about the value of the Master's degree and what they do.

I have a friend with a degree in Political Science who is now making a living doing a one-man Teddy Roosevelt show. (He played the White House last week or so on Roosevelt's 150th birthday). So I guess that's one thing you can do with a poli sci degree.
