Three on restaurants

From Business Week, :

"America's Long-Running Restaurants" Including "America's oldest continuously run establishment", Union Oyster House in Boston.

"The Restaurant-Failure Myth". A lot of people have heard "9 out of 10 restaurants fail in the first year" but there apparently is no data to support this. The fraction is apparently about 25% in the first year and 60% in three years, roughly the same as for all new businesses.

"Restaurateurs Don't Just Wing It": "Passion isn't enough. You'll need a sound concept and management experience . . ."
